Stainless steel furnishings sit against cave-like walls in this health-conscious bakery<\/a> in Madrid<\/a> designed by Spanish studio Isern Serra<\/a>.<\/span><\/p>\n FUBA<\/a> \u2013 an abbreviation of Future Bakery \u2013 is located in the capital’s Chamber\u00ed district, and offers an array of gluten-free goods that are free from refined sugars and ultra-processed flours.<\/p>\n It’s the brainchild of chef Fabi\u00e1n Leon, who wanted to open a venue where those with allergies, intolerances or generally enthusiastic about healthy eating could enjoy classic bakery items without compromising on taste.<\/p>\n As well as devising what’s on FUBA’s menu, Leon was also heavily involved with the spatial design of the bakery.<\/p>\n “From his very first visit to the studio, [he] conveyed a precise vision, grounded in the dual notions of origin and future,” said Isern Serra<\/a>, which was tasked with realising Leon’s ideas.<\/p>\n “He defined origin as something natural, ancestral, traditional, and organic. Conversely, future was associated with innovation, technology, and the dreamlike.”<\/p>\n To capture this duality, the studio has rendered the interior of the bakery to look like an aged cave.<\/p>\n Walls and window frames have been rounded off with plasterboard, then covered in a layer of lime wash.<\/p>\n
